Inspector notes: No evidence of proper warewashing. Employees unable to set up three bay sink at this time only one drain plug available. Despite having several other prep sinks tea leaves are being washed at rinse bay. PIC clean up three bay sink and tries to set up three bay sink but only one drain plug available. PIC states that equipment is washed with hands (without filling the wash bay) rinse with hands at rinse bay and sanitized at sanitizing bay. Sanitizing bay set up with QUATs tablets and PIC tries to measure concentration with chlorine test strips. I explain him that they are the wrong ones but the only QUATs test strip on site is totally damaged by water. Provide proper warewashing all the time.
