Per the person in charge the baked potatoes had been pulled from the oven at 11:30am and voluntarily discarded them. The PIC states the beef had been pulled from the oven at 12:30 and after the observation cut the beef into smaller pieces and placed them on a sheet tray and into the walkin freezer.
