Please ensure that you have a person in charge who is able to demonstrate and perform duties. Provide a CFPM and Allergen certificate. Spoke to Lillian and she was not aware of what sink was used for hand washing was not able to demonstrate the use of the 3 bay sink Illness policy and stated that she washes her hands with water because they don't have soap behind the counter. Please ensure staff is properly trained on where to wash and how to operate the 3 bay sink to clean and sanitize the dishes how to store ice scoops and illness policy. Provide
