Inspector notes: cooked chicken stored in a deep pan which temped at 59F PIC moved the chicken in 2 small pans and put it in the freezer to cool. All TCS food needs to be cooled from 135 to 70F in 2 hrs and 70 to 41F in 4 hrs. Reviewed the cooling procedure with PIC and a corrective action wa taken by the PIC.
